Strawberry compote without sterilization for the winter

Strawberry compote itself is very light, because the juice in these berries is not as concentrated and rich as in cherries or currants. Therefore, such a drink will quench your thirst well.

Sort out the berries so that you don't come across rotten and unripe ones. Tear off the sepals and rinse gently under running water. Throw in a colander and leave for a while to let the glass excess moisture.

Pour water into a saucepan and put on fire. Bring to a boil.

Place the berries in a colander in a pot of boiling water for a few minutes. Thus, the berries will gradually give off juice.

As you cook, periodically, as it were, rake a new portion of water with a colander, since it cannot circulate freely and warm the berry. Hold the strawberries in this way for 5 minutes, then carefully transfer them to the jar in which the seaming will be done.

Add sugar to a saucepan with syrup and cook, stirring constantly, until it is completely dissolved and slightly thickened. If necessary, remove the resulting foam from the surface.

Pour the resulting syrup over the berries, preferably in several approaches, so that the jar has time to warm up and does not crack. If the syrup has boiled too much, add boiling water on top.

Roll up the jar with a turnkey lid, place it upside down on a folded towel and wrap it up with a blanket. Leave the compote to cool completely, and then store in a dark and cool place.
