Strawberry and strawberry compote for the winter

Compote prepared in this way turns out to be very rich, bright and concentrated. If necessary, it can be diluted with cool water so that it does not taste very sweet and refreshes better.

The first step is to prepare the syrup. To do this, fill a saucepan with 2 liters of water, add sugar and put on medium heat. Stirring constantly, bring the liquid to a boil and cook until the sugar is completely dissolved, it will take about 4-5 minutes. After this time, remove the pan of syrup from the heat and set aside.

Sort the strawberries and strawberries thoroughly beforehand so that rotten or unripe berries do not get into the compote. Also, tear off the stalks, then rinse the berries under running water and pat dry on a towel or in a colander.

Pour the dried berries into a deep bowl and pour over the previously prepared sugar syrup, it should completely cover the fruits. Close the container with cling film and leave to infuse at room temperature for 3-4 hours. The berries will give off juice, slightly decrease in size and become denser. At the same time, you can sterilize the cans for seaming, they just have time to cool and dry.

Fill a large saucepan with 7-8 liters of water and put on fire. Use a slotted spoon to remove the fruits from a bowl of berries in syrup and place them in the jars. Pour the syrup itself into a separate small saucepan and bring to a boil. Cook for 2-3 minutes, then remove from heat and gently pour over the berries. It is better to do this gradually with the help of a scoop, so that the glass has time to warm up and does not crack.

Place the covered jars in a large pasteurizing pot. Water should cover the cans up to the neck or up to the shoulders, if there is not enough water, top up. Gradually heat the water to about 85 ̊C, this is a very light boiling state. Keep jars of compote in this water for about 15-20 minutes.

After the specified time, using tongs, carefully remove the cans from the pan, tighten the lids tightly and make the seams upside down. Cover them tightly with a towel and leave to cool completely.
