Strawberry meadow compote for the winter

This compote will appeal to those who like very light berry drinks. Strawberries by themselves do not have such a rich juice as cherries or strawberries, so the compote from it will turn out to be weakly concentrated, but very refreshing and summer.

Carefully sort through the strawberries, getting rid of small debris, spoiled and unripe fruits. This stage is very important, since just a couple of berries can greatly spoil the taste of the entire seaming. Rinse the strawberries in a bowl of water, stirring gently with your hand for a few minutes. Collect all floating debris from the surface, drain the water and rinse the strawberries in a colander under a weak stream. Spread the berries on a towel and let them dry slightly.

Tear off the sepals and put the berries in a previously prepared jar. The preparation of the container for seaming consists in its sterilization, this can be done in many ways.

Pour water into a saucepan, add sugar and put on fire. Bring the liquid to a boil, stirring constantly, and cook for a few minutes until the sugar is completely dissolved.

In several passes, pour the syrup into the jar in a thin stream. This is done so that the glass has time to warm up and does not crack. Cover the jar with a lid and leave to infuse for 15-20 minutes.

After the specified time has passed, drain the liquid from the jar into a saucepan and put on fire. Bring to a boil, stirring occasionally, and simmer for about 2-3 minutes.

Again, in several approaches, pour the syrup into the jar of berries and roll it up with a turnkey lid. Turn it upside down, wrap it up in a thick blanket and leave to cool completely.
