Strawberry compote in a 2-liter jar for the winter

Strawberry compote preserves the taste, aroma and beneficial properties of this wild berry. The saturation of this drink directly depends on the amount of berries in the jar, so at least 1/3 of the container volume is put in it. Berries for compote are chosen dense and with a bright pulp color. For a balanced taste and preservation of color, lemon or citric acid is added to the compote. We prepare compote in a 2-liter jar, using the double pouring method and without sterilization.

Freshly picked strawberries must first be sorted out and small forest debris removed. Then rinse it well and leave in a colander so that all the water is glass, and only then carefully remove the sepals, although sometimes they are left.

A 2 liter jar should be thoroughly washed with baking soda and sterilized with hot steam or dry. Be sure to boil the lid in water. Pour clean strawberries into a prepared jar and put a slice of lemon with a peel on it.

Boil clean drinking water in a kettle or saucepan and then pour the strawberries and lemon with boiling water. Cover the jar with a lid and leave for 15 minutes to infuse.

After this time, drain the water from the jar through a special lid and bring it to a boil again. Pour a glass of granulated sugar into a jar to the strawberries and re-pour the berry, filling it with water to the very top of the neck.

Then close the compote tightly with a lid, check the sealing tightness and turn the jar in your hands several times to completely dissolve the sugar. Put the jar with strawberry compote on the lid and cover with any "fur coat" for 10-12 hours.

Store the strawberry and lemon compote in a cold place. It will retain its organoleptic properties well throughout the year.
