Strawberry compote with raspberries for the winter

Berry compotes are great for refreshing and quenching thirst, if you don't overdo it with sugar. But since it is not always possible to get berries at any time of the year, such drinks can be prepared from the summer and they will be stored for a long time, especially if you use preservatives like citric acid.

Go through the berries, getting rid of rotten fruits and small debris. Rinse them separately by pouring them into a container of water. Mix gently with your hands, washing away dust and sand, then collect the debris that has floated to the surface, drain the water and rinse the berries in a colander under a weak stream of running water.

Tear off the sepals from the strawberries and put all the berries on a towel to dry a little.

In the meantime, sterilize the jars and lids in any way you like. Let them cool completely and dry completely.

Arrange the strawberries in jars of about 100 grams per container with a volume of 500 milliliters. If the berries are large enough, you can cut them in half or into wedges to save space.

Top with the same amount of raspberries.

Boil water and pour it over the berries. Cover the jars with a lid and leave to infuse for 10-15 minutes so that the fruits give off juice.

Drain the juice gently into a saucepan, add sugar and put on fire. For a brighter color and better preservation, you can add a pinch of citric acid to the liquid. Bring the juice to a boil, stirring constantly with a spatula, and cook for 5 minutes until the sugar is completely dissolved.

Gently pour the resulting syrup back into the jars. It is better to do this slowly and in several passes so that the glass does not crack. Then roll up the cans on a turnkey basis, turn upside down and fold on a towel. Cover the top with a thick blanket or blanket and leave to cool. Then you can rearrange it in a dark and cool place for long-term storage.
