A bright and rich yellow plum compote is another option for harvesting plums for the winter. Honey plums, soaked in the rays of the summer sun, will make the preparation fragrant, give it a beautiful sunny color and cheer you up on a gloomy autumn day, reminding you of the warm summer. It is recommended to add dense plums to the preparation, which you can use after opening the jar for making baked goods and desserts.

For the preparation of compote, we select dense fruits, since during the cooking process we will divide them into halves, and they must retain their shape when processing them with boiling water. We wash the plums under running water and put them on a kitchen towel so that they dry from the water. We rinse the compote jar with baking soda and rinse well with water. Then we put it in a cold oven with the neck down and sterilize at 110-120 degrees for 5-7 minutes. We take the sterilized jar out of the oven with a grip and let it cool for 5-10 minutes.
Bring the compote to a boil and pour it back into the jar. Close the jar tightly with a lid, turn it upside down, check the tightness and cover it with a terry towel. Leave at room temperature until it cools completely. After the compote has completely cooled down, put it in a cool dark place for storage.
