Yellow plum compote for the winter without sterilization

Fragrant bright yellow plum compote is a great drink for quenching your thirst. You adjust the amount of plum in the compote to your taste, and to make the drink slightly sour, you can add a little citric acid to it, at the tip of a teaspoon. Since we prepare compote from a plum with a stone, we recommend not to store it for a long time, but to drink it within several months from the date of conservation. From the specified number of products, we will get two jars of compote, 700 ml each.

We sort out the plums, remove the leaves and stalks. We only need hard fruits so that they do not lose their shape during the cooking process when processed with boiling water. We rinse the plums in warm running water and put them on a kitchen towel so that the water is glass.

We wash the cans for the preparation with baking soda, rinse well with water and put them in a cold oven on the wire rack with the neck down to sterilize at a temperature of 110 degrees for 5-7 minutes. Then, using the clamps, we take the jars out of the oven and let them cool for 10-15 minutes. After that, we put dried plums in jars.

Prepare the syrup in a deep saucepan: bring the water to a boil, add sugar, stir, boil for 3-5 minutes and remove from heat. Pour hot syrup into jars and tighten them with boiled lids.

We turn the jars with compote upside down and leave at room temperature until they cool completely, covering them with a blanket. After the compote has cooled to room temperature, put the jars in a cool dark place for storage.
