Yellow plum compote for the winter

A rich concentrated drink from plums is very convenient to use - by rolling up a liter jar of such a drink, you can dilute it with boiled water and prepare a couple of liters of compote. It is very convenient to use liter jars for preparation - they take up little space on the shelf in the pantry.

We wash the dense yellow plum under running water, removing the stalks and leaves. We spread it on a kitchen towel and leave for 10-15 minutes to drain the water. During this time, we will prepare the cans: rinse them with baking soda, rinse them with water. We put the jars in a cold oven with the neck down and sterilize at a temperature of 110-120 degrees for 7-8 minutes. Then we take out the cans and leave them for 10-15 minutes to cool.

Pour water into a saucepan and put on fire, bring to a boil. Cut the plums in half, remove the seeds, put them in a jar and pour boiling water over them. Leave for 15-20 minutes to blanch in boiling water.

After a while, we put on a nozzle with holes on the jar and pour the water back into the pan. Add sugar, stir, put on fire and bring to a boil.

Pour hot syrup into jars and seal them tightly with boiled lids. We turn the jars with compote upside down, wrap them with a warm blanket or towel and leave to cool completely at room temperature. Then we remove the compote for storage in a dark, cool place.
