Strawberry jam with agar-agar for cake

Instead of the classic strawberry jam (usually the berries are quickly eaten, but the syrup remains), now many housewives prefer strawberry jam. It turns out to be a bright color, tasty and not too sweet dessert and is great for a layer of cakes and other homemade baked goods. For jam, choose a strong ripe berry. For gelling, we take agar-agar.

Then rinse the berries thoroughly under running water and remove the sepals.

Put the prepared berries in a bowl, add sugar calculated for the amount of strawberries to them and chop with an immersion blender until smooth. If you want jam with small pieces of berries, then chop it in another way.

Then pour this strawberry puree into a saucepan for cooking jam, only the saucepan should not be small, because the mass actively rises during boiling and can quickly escape. Cook the jam over low heat for 20 minutes from the start of the boil.

Pour the required amount of agar-agar into a glass, fill it with water at normal temperature and mix well. Then pour this solution to the boiling jam, stir with a spoon and cook for another 10 minutes.

Pour the hot jam into small sterile jars and immediately seal them tightly with boiled lids. After cooling, the strawberry confiture with agar-agar will acquire the consistency of a thick jelly. You can start baking your cake.
