Preservation of birch sap for the winter

We offer an interesting way of harvesting birch sap for the winter. It is interesting in that orange and mint are used to add additional flavors. Very refreshing!

Ingredients

Cooking process

step 1 out of 5
Filter the birch sap through a fine sieve. Then we put it in a saucepan and put it on the stove.
step 2 out of 5
Bring to a boil, remove the foam with a slotted spoon. Do not boil.
step 3 out of 5
Wash the orange with hot water, dry and cut into small cubes. If you come across bones, throw them away. Wash the jar, sterilize it in any suitable way. After that, dry the container well. We do the same with the lid. We put sliced orange and mint in a jar. By the way, you can use both fresh grass and dried. If the mint is fresh, then wash it and dry it before putting it in a jar. The dried grass has usually already gone through the rinsing step. We also pour granulated sugar into the jar.
step 4 out of 5
Pour boiling birch sap into a jar with orange and mint.
step 5 out of 5
We immediately tighten the jars with sterilized dry lids. We turn the container upside down, wrap it with a warm blanket and leave the juice to cool in this position. We put the cooled jar for storage in a cool, dark place.
Bon Appetit!
