Canned cucumbers in tomato juice for the winter

I want to share a wonderful recipe for canned cucumbers in tomato juice. Appetizing cucumbers are crispy with a perfectly balanced marinade. A juicy snack will help you decorate the festive table.

Ingredients

Cooking process

step 1 out of 5
Choose small to medium sized cucumbers. Wash them thoroughly and then pat dry. Wash the cans of baking soda or detergent well. Sterilize the washed jars in the oven, in the microwave or in a water bath. Peel the garlic, rinse under cool water and cut into several pieces.
step 2 out of 5
Fill the prepared sterile jars with cucumbers, placing them as tightly as possible to each other. Add chopped garlic, bay leaf and black peppercorns to the empty spaces.
step 3 out of 5
Prepare the marinade. Pour the required amount of tomato juice into a container with a thick bottom, add granulated sugar and salt. Mix thoroughly. Put the container with the marinade on moderate heat and bring to a boil, then reduce the heat and boil the marinade for about 5 minutes.
step 4 out of 5
Pour cucumber jars with pre-prepared boiling water and leave for 10 minutes. After the time has passed, drain the water from the jars and carefully, so as not to burn yourself, pour the boiling marinade. Cover with lids, pre-doused with boiling water or boiled in a separate saucepan.
step 5 out of 5
Using a seamer, roll up and then turn upside down and wrap in a warm blanket or terry towel. Leave in this position for a day. Then turn the cans of canned cucumbers in tomato juice over and transfer them to a cool, dark place for storage.

Enjoy the crunchy cucumbers!
