Royal cheesecake with cottage cheese and jam

A simple recipe for an inexpensive curd cheesecake. Products for its preparation can be found in any store. To set off the delicate taste of the curd filling, let's make a juicy layer of jam. Anyone is suitable, not too liquid, and it is desirable that it be with a slight sourness. Also add prunes to the curd. This step is optional, but it will help make the cheesecake even tastier and juicier.

Place the butter in the freezer for half an hour in advance so that it cools and becomes solid (not ice-cold). This will make it easier to grind it. Sift the flour and pour it into a wide bowl. Add vanillin, half of the specified amount of granulated sugar and baking powder, mix. Grate the cooled butter on a coarse grater directly into a bowl of flour. If the oil sticks while rubbing, dip it in the flour mixture. Mix everything together and rub thoroughly with dry hands. You should get a small, uniform crumb that does not stick to your hands. The sand base for the cheesecake is ready.

Cooking curd filling. To do this, put the cottage cheese in a bowl. We divide the eggs into yolks and whites. We immediately place the whites in a bowl for beating, and spread the yolks to the cottage cheese. Pour the rest of the granulated sugar on top and spread the sour cream. Mix the curd with the added ingredients with a spoon or blender. If you prefer a more homogeneous and tender curd layer, it is better to use a blender. If you like a pronounced curd structure with grains, stir with a spoon.

Beat the whites in a separate bowl with a mixer at high speed. We achieve a steep, stable foam that leaves peaks behind the whisk. The resulting foam is introduced in portions into the curd mass, gently mix until smooth.

We turn on the oven and heat it up to 190 degrees. Preparing a baking dish. Lubricate it well with butter. You can also cover it with oiled parchment - this will simplify the task of removing the ready-made cheesecake. If the mold is silicone, you don't need to lubricate it - the cheesecake will come off so easily. Pour about two-thirds of the sand crumbs into a mold and distribute it evenly over the entire bottom. Spread the jam on the crumb layer with a spoon, trying to make an even layer.

On top of the jam, gently spread the curd mass with a spoon, trying to evenly distribute it so as not to grease the previous layer. On top of the curd mass, lay out the washed and dried prunes in random order. The last step is to pour out the rest of the crumb, forming an even surface layer.
