Sand crumbs, delicate curd mass and juicy apples with sourness are a magic combination that everyone has known since childhood. Cheesecake with cottage cheese and apples is ideal not only for homemade tea, but also as a treat for guests. In this recipe, we use semolina - it is not felt in the finished cake, but it allows the sandy base not to get wet and remain a decorated layer.

Cooking sand crumbs. Pour the specified amount of flour, semolina, granulated sugar and baking powder into a wide bowl. Stir dry ingredients.

We spread soft butter in the resulting dry mixture and sprinkle it on all sides so that it does not stick. Rub the butter and flour mixture with dry hands until a homogeneous, fine, damp crumb is obtained. It should crumble easily without sticking to your hands. The blank for the sand base is ready, set it aside.

To prepare the curd filling, put the curd in a separate bowl. It is desirable that it be fatter - so the cheesecake will be tastier. Pour semolina, granulated sugar, vanillin to the curd, add eggs. Rub everything together with a spoon or punch with a submersible blender. You should get a homogeneous mass, the sugar crystals should dissolve.

To prepare the apple filling, wash the apples, dry them and cut them into quarters. Cut off the peel and cut out the seed pods. Rub the fruit pulp on a coarse grater. Immediately sprinkle the grated apple mass with lemon juice so that there is no strong darkening. We also add granulated sugar, mix.

Preparing a baking dish. Lubricate it well with butter. You can also cover it with oiled parchment. Pour a third of the cooked sand crumbs onto the bottom and distribute it evenly over the entire area.

The next layer is curd mass. Lay it out carefully and smooth it out with the back of the spoon. It is important not to displace the previous crumb layer.
