Chicken breast cutlets with mushrooms

Adding mushrooms significantly changes the taste of chicken cutlets. They immediately become much more aromatic, juicier and more interesting. You can use various mushrooms: chanterelles, champignons, pre-boiled forest mushrooms are perfect. Alternatively, you can add some pickled ones. In this recipe, we cook chicken breast cutlets with chanterelles, which do not require preliminary heat treatment.

Wash the chanterelles thoroughly to wash off surface dirt. After washing, dry the mushrooms. If champignons are used, simply wipe them with a damp cloth. In the case of forest mushrooms, we wash them and boil them in salted water for half an hour. If the mushrooms are frozen, we defrost them completely. Cut the prepared mushrooms into small pieces.

Dry the chicken breast with a paper towel and cut into small cubes. Be sure to cut the pulp across the fibers so that the finished cutlets are tender. Grate hard cheese with large holes. Wash the parsley, dry it, discard the coarse stems. Finely chop the greens with a knife. In a bowl, combine chopped breast, grated cheese, chopped mushrooms and chopped parsley. Add the indicated amount of mayonnaise, salt and black pepper to taste. Pour in potato starch. Peel the garlic, rinse it and pass it through a press. Add to the bowl with the main ingredients.

Mix all the ingredients with a spoon until they are relatively homogeneous. The mass should have a fairly thick consistency.

Heat a small amount of vegetable oil in a frying pan until hot. Spoon out the cutlet mass in the form of cutlets of the desired size. Fry for three to four minutes on each side. Add some vegetable oil if necessary. Do not close the pan with a lid - this will give a golden crispy crust.

Remove the finished cutlets from the pan, transfer to a dish and serve. These cutlets are delicious both hot and cold. Fresh vegetable salad and various sauces will perfectly complement this hearty dish.
