Here is a recipe for an incredibly beautiful and incredibly tasty raisin craffin. What is its peculiarity? It differs in the way it is molded and in appearance. It turns out baking airy, soft, moderately sweet and with a light citrus note. Craffin's taste and appearance will conquer anyone!

We heat the milk until warm, then pour it into a convenient container. Add yeast and granulated sugar (10 g) to it. Mix everything, then cover the container with a towel and leave for 10 minutes. This time is enough for the yeast to activate.

Add salt to the sifted wheat flour. After that, we make a small hole in the center, where we pour in the yeast mixture.

In a separate container, combine the egg, yolks, the remaining granulated sugar. Mix everything thoroughly with a fork or whisk.

Pour the resulting egg-sugar mixture into a container with flour and dough.

Next, add orange juice to the working container. We mix all the ingredients.

Melt the butter and pour it into the rest of the ingredients. Add vanilla essence and orange peel to this.

After that, you need to knead the dough so that it turns out smooth, elastic and easily leaves the hands. Cover the finished dough with a towel and leave in a warm place for 60 minutes. During this time, the dough will approximately double.

After a while, knead the dough and divide it into 3 parts. You can experiment with sizes - make some bigger, some smaller.

Roll out a thin layer of dough. Lubricate the dough with softened butter, sprinkle with nutmeg.

Next, we distribute the raisins over the dough.

We roll the dough with the filling into a roll. We leave the blank aside while we roll out the rest of the dough and fill it with the filling as well.

Then we cut the roll along, but not completely. After that, we begin to fold the dough with a snail.

Cover the baking dishes with parchment and place the craffins in them. Leave for proofing for 60 minutes. Half an hour before the end of the proofing, turn on the oven and heat it up to a temperature of 200 degrees. We send the craffins to bake in a hot oven for 10 minutes, then reduce the temperature to 180 degrees, cover the baking with foil and bake for another 25 minutes.
