Red currant, mashed with sugar without cooking for the winter

Red currant itself is a very sour berry and few people eat it, but it is the sour juice of the grated berry that contains many substances to strengthen the immune system, and when mixed with sugar, this dessert turns out to have a pleasant sweet and sour taste. Such a workpiece is stored only under low temperature conditions, otherwise it begins to ferment even with a high sugar content.

Ingredients

Cooking process

step 1 out of 8
First, we measure out the amount of sugar and red currants indicated in the recipe, based on the volume of your workpiece.
step 2 out of 8
Carefully separate the berries from the twigs and place them in a large bowl. Then we rinse well in cold water, changing it several times. Remove excess moisture from the berries with a towel.
step 3 out of 8
Grind the currants in a blender or food processor until puree.
step 4 out of 8
Twist the berry for only 1–2 minutes, so that the seeds are not crushed. If there are no kitchen gadgets, then chop the currants with a simple potato crush.
step 5 out of 8
Pour the prepared currant puree into a separate bowl and add the calculated amount of granulated sugar to it. Then we mix the grated currants with sugar well so that the sugar dissolves completely.
step 6 out of 8
We transfer the currants with sugar into small pre-sterilized jars, without filling them to the very top.
step 7 out of 8
Pour a tablespoon of sugar on top of the currants, which will be a kind of cork. We seal the jars tightly with boiled lids.
step 8 out of 8
Red currants, mashed with sugar and without cooking, are ready. We store it in the refrigerator or cold basement.
Happy and tasty preparations!
