Red currants, mashed in a blender without cooking for the winter

Currant berries are ground in a blender until puree, then mixed with sugar and left for 20 hours. Then everything is laid out in jars, sprinkled with granulated sugar on top and sent to storage in the refrigerator.

Ingredients

Cooking process

step 1 out of 5
We remove the red currant berries from the twigs and sort them out. Then we rinse thoroughly under running water, put it in a colander and leave it until all excess liquid has drained off.
step 2 out of 5
Transfer the washed berries to a blender bowl and grind them until smooth.
step 3 out of 5
We send the resulting mass into a separate container and fill it with granulated sugar. Mix everything thoroughly with a spatula and let stand at room temperature for 20 hours. During this time, the sugar will dissolve, and the currant puree itself will become thicker. Stir occasionally. It is also better to cover the container with gauze so that any debris does not get there.
step 4 out of 5
We thoroughly rinse the jars under hot water and sterilize them in any convenient way. We spread the red currants grated with sugar on them and generously fill everything with granulated sugar.
step 5 out of 5
Close the jars tightly with sterile lids or roll them up. We send for storage in the refrigerator. We take it out in winter and serve it with hot tea.
Bon Appetit!
