Harvesting red currants with sugar for the winter without any heat treatment, that is, in a cold way, allows you to maximize all the vitamins and useful properties of this berry, and its taste is fresher and more pleasant than the berry itself. The optimal proportion of berries and sugar is 1: 1.5 - 1: 2. Lovers of proper nutrition can replace sugar with honey. Such currants are stored only at low temperatures, and even a large amount of sugar does not save from fermentation. Remember that all cooking utensils must be clean and dry.

First, we carefully sort out freshly picked currants. We remove small debris and separate the berries from the branches. Small branches can be left. Then we wash the berries well with cold water and remove excess moisture with a towel.

We grind clean berries either with the help of kitchen gadgets or crush with a wooden spoon. We squeeze the resulting berry mass well through gauze folded in two layers, because pure juice is needed for harvesting.

The amount of juice obtained is measured by volume, not weight. About 700 ml of juice is obtained from 1 kg of red currant. We take 1.5 liters of granulated sugar to it.

Pour the juice into a deep bowl, pour the sugar and stir with a wooden spoon until maximum dissolution. Then leave the currants with sugar for 3 hours. During this time, the juice will begin to gel and the sugar will dissolve completely.
