With the spread of proper nutrition, it has become popular to avoid refined sugar, wheat flour, and yeast in baked goods. We present you a recipe for a delicious biscuit cake made with kefir, rice and corn flour with the addition of baking powder.

Separate the whites from the yolks from 3 eggs. Pour kefir into the yolks and add sweetener.

Separately sift two types of flour, mix. Pour baking powder there and mix again.

Little by little, add flour to the total mass and stir with a whisk until smooth.

Rinse dried apricots and nuts in warm water in advance, cut into small pieces using a sharp knife. Remove the rind from the washed lemon with a citrus grater, without touching the white part of the rind. Mix the cake filling and set aside.

Beat the whites separately with a whisk of a mixer using fat-free vinegar until they reach stable peaks.

Add the beaten egg whites in portions to the dough and mix well with gentle movements. Add filling and mix thoroughly again.

Transfer the dough to a baking dish with a diameter of about 12 cm, bake in an oven preheated to 180 degrees for 45 minutes. If desired, at the end of baking, you can cover the dish with foil so that the cake does not start to burn.

For the glaze, beat 1 protein until a firm foam, add sweetener. Whisk until an airy, stable mass is obtained. Spread icing on a slightly cooled cake and decorate it as you wish.

The cake turns out to be porous and airy, however, it has a caloric content several times lower than the traditional one.
