Alexandrian dough cake in a slow cooker

A multicooker will be a great helper in baking if you don't have a bread maker. It is almost impossible to dry the cakes in it, but this method will take almost the same time as baking in the oven.

To prepare the dough, combine eggs and sugar in a bowl until it is completely dissolved and a light foam appears.

Remove the butter from the refrigerator at least one hour before cooking. Cut it into small pieces and stir in the egg and sugar mixture. If you can't get it in advance, melt it in the microwave.

Heat the milk, crumble the pressed yeast into it and add a teaspoon of sugar. Stir everything until the dry ingredients are completely dissolved, leave for a couple of minutes until a frothy cap forms and pour into the dough base.

Cover the resulting mass with a towel or cling film and leave for 8-10 hours. During this time, the dough will rise and fall several times, and the oil will peel off and form a dense crust with cracks on top.

Sift flour to the resulting dough, add salt and vanilla sugar. Knead everything until you get a smooth, soft dough that is slightly sticky to your hands.

Rinse and dry the raisins and candied fruits in advance, add a tablespoon of flour and stir so that the dried fruits are completely covered with it. Add to the dough and knead until they are evenly distributed. Cover the resulting dough with a towel and put it in a warm place for 1 hour to rise.

After the specified time, knead the dough and transfer to the multicooker bowl. Close the lid tightly, set the control panel to the "Heat" mode and turn off after 5 minutes. Without opening the lids, leave the dough to stand for another 40-50 minutes.

Then turn on the “Oven” mode with a timer for 65 minutes. If your multicooker has the ability to set the temperature, then for the first 45 minutes, set it to 150 ̊С, then lower it to 120 ̊С. Gently remove the finished cake from the bucket and cool to room temperature.

For the icing, separate the protein and mix with the icing sugar. Add some lemon juice and stir until smooth.
