Some housewives do not like working with yeast dough, because it is very moody and may not rise at the right time. For such a holiday as Easter, I would like to do without unpleasant surprises. Kefir cake without yeast is always obtained.

Heat the oven to 180 degrees. Melt the butter in the microwave and cool.

Divide the eggs into yolks and whites. Pour vanilla sugar and powdered sugar into the yolks (can be replaced with regular sugar). Beat until the mass is whitened and increased in volume, use a mixer for this. Pour in the loosened butter, lemon juice, beat until smooth.

Sift some of the flour into the yolk mass. Pour in soda. Pour in slightly warmed kefir. Beat. Sift the remaining flour and beat again until smooth.

Pour raisins with boiling water for 10 minutes, then squeeze, dry with paper towels. Dip the raisins in flour and add to the dough.
