Chicken liver with potatoes and mushrooms

Chicken liver, potatoes, mushrooms and sour cream - the perfect combination of flavors! The dish is quite hearty and perfect for lunch. Any mushrooms can be used: if they are champignons or oyster mushrooms, then fry them before baking. If forestry is used, then boil them first and then also fry them. You can bake the liver with potatoes and mushrooms both in general form and in portioned pots.

We prepare all the ingredients for cooking. We wash the chicken liver well, remove all adjacent films, vessels and veins. Dry the liver with paper towels. Peel the potatoes, rinse and dry. We free the onions from the husk and wash. We also wash and dry the mushrooms. If we are talking about forest mushrooms, then boil them in salted water for half an hour.

Cut the onions into thin semicircles. Grind the prepared mushrooms into small pieces.

Heat a small amount of vegetable oil in a frying pan. Put the onion and mushrooms in a pan and fry them at medium temperature for ten to fifteen minutes, until they begin to brown slightly.

Then add sour cream, salt, black pepper and mix. Bring the resulting sauce to a boil, cook for a couple of minutes and remove from the stove.

In a separate frying pan, heat the vegetable oil (a couple of tablespoons) and lay out the prepared chicken liver. Fry it for one and a half to two minutes at high temperature until a light crust appears. At the end of cooking, salt and pepper to taste. Remove from the pan and transfer to a plate.

Add a little oil to the frying pan and heat it up. Cut the prepared peeled potatoes into small cubes and pour them into the heated oil. Fry the potatoes with stirring for ten to fifteen minutes until soft. Finally, add the potato seasoning and salt to taste. Mix and remove from the stove.

Put the fried potatoes in a mold or portioned pots. Spread the fried chicken liver on top.

The final layer is mushroom mass. We close the form with a lid or tighten it with foil with the shiny side inward and put it in an oven preheated to 180 degrees. We bake for twenty minutes.

We take out the finished liver with potatoes and mushrooms from the oven. Serve hot, sprinkled with fresh herbs. Additionally, you can serve any fresh vegetables.
