Chicken cutlets with carrots in the oven

Traditionally, chopped onions are added to the minced meat: it gives the finished cutlets juiciness and aroma. Also, the cutlet mass can be "diluted" with a small amount of carrots. In addition to juiciness, color and, of course, additional fiber will be a bonus. We suggest not frying these cutlets in a pan, but baking them in the oven to make them as useful as possible. When prepared this way, they are safe for children and are great for those who count calories in their meals.

We prepare products for cooking cutlets. Separate the chicken fillet from the skin, bones and cartilage. For such purposes, you can use any part of the chicken. Peel the onions, wash them and dry them. Peel the carrots, wash and dry.

We prepare minced meat from the fillet using a meat grinder or blender for this. Grind onions and carrots, similar to chicken meat.

Break an egg to the minced meat with vegetables, add semolina, salt and black pepper to taste.

Mix everything thoroughly together so that the ingredients are evenly distributed. It is recommended to beat off the cooked minced meat so that it becomes more viscous and thick. To do this, we take the mass in our hands and throw it on the surface of the table or into a wide bowl. After five to ten minutes of such actions, the consistency of the minced meat will change noticeably. We form small cutlets, wetting our hands with cold water so that the minced meat does not stick.

Cover the baking dish with parchment or foil, lightly grease the surface with vegetable oil. We spread the prepared cutlets. Pour water in the specified amount into the mold.

We close the form with foil, pinching the surface around the entire perimeter. Preheat the oven to a temperature of 200 degrees and put the form on the middle level. We bake for twenty five to thirty minutes.

We take out the finished cutlets from the oven, transfer them from the mold to the dish and serve. As a side dish, you can serve a salad of fresh vegetables and herbs.
