Rinse the chicken breast and pat dry with a paper towel.

Place on a cutting board and trim off fat, films, and cartilage if present. Cut the fillet across the grain into 2 cm pieces, wrap with cling film and beat with a kitchen hammer, reducing the thickness by about half and increasing the width accordingly.
