Country style chicken soup with dumplings

If you want a light hot dinner, but do not want to bother for a long time at the stove, we suggest making a village style chicken soup with dumplings. A dish without culinary delights, but nevertheless very tasty, homemade, soothing and warming. We recommend serving this soup sprinkled with fresh herbs and accompanied by fresh bread.

Place the chicken broth in a saucepan and bring it to a boil. Cut off the peel from the potato, wash it and cut it into small cubes. We send prepared potatoes to chicken broth and cook until soft.

While the potatoes are boiling, prepare the vegetables for frying. Peel the onions, wash them and chop them into small cubes. Peel the carrots from the surface skin, rinse and three on a coarse grater. Heat a small amount of odorless vegetable oil in a frying pan and put the prepared vegetables in it. Fry the onions and carrots at a medium stove temperature, stirring occasionally, until soft. Put the finished hot frying in the soup, add the bay leaf, as well as salt to taste, mix and continue cooking.

Next, we begin to prepare the dumplings. Break eggs into a bowl, add a pinch of salt and shake well with a whisk.

Add flour. We mix.

The dough turns out to be medium in terms of density: not too thick and not liquid, about like a pancake.

We form dumplings from the resulting dough: take small portions of the dough with a teaspoon and dip them into the boiling soup. Thus, we make dumplings from the whole dough. Cook the dumplings for two to three minutes. Pour the finished soup into portioned deep plates and serve hot, sprinkling with fresh chopped herbs.
