Kvass from white bread

Kvass is a healthy, thirst-quenching drink that can be prepared from malt, bread, rusks, fruits and even vegetables. The drink is prepared through fermentation. I suggest making a white bread drink.

Cut the white bread into slices. Line a baking sheet with baking paper and spread the bread slices evenly. Place a baking sheet with white bread in an oven preheated to 140 degrees and cook the croutons until golden brown, turning occasionally so that they do not burn out. This may take about 20-30 minutes.

Boil the required amount of drinking water. In the meantime, dilute the fresh yeast in a little warm water and leave for about an hour.

Remove the finished croutons from the oven, then put them on a plate and cool completely. Grind the cooled croutons with a blender, coffee grinder or use a rolling pin. Put the crushed croutons in a container, and fill with prepared boiling water, leave to brew for 4 hours under the lid. Then pour in yeast and add granulated sugar.

Stir and leave to infuse for 6-12 hours at room temperature until foam forms. Strain the finished homemade kvass through a fine sieve covered with gauze. Sort out a handful of raisins and rinse under running water. Wash the lemon and cut into wedges.

Add lemon wedges and raisins to strained kvass. Place the kvass in the refrigerator to cool for about 3-5 hours, and then serve. If you plan to constantly prepare such kvass, leave the sourdough. Put crackers and sourdough in a container in a 1: 1 ratio, add a little granulated sugar and cover with warm water. Kvass will be ready for use in 10 hours.
