Kvass from birch sap without sugar, although the juice is sweetish, turns out to be bland, so yeast or dried fruits and bread are added to it to enhance fermentation. You are offered the simplest recipe for making such kvass - from juice and yeast. The drink will be well carbonated and with a pleasant sour taste, and you can sweeten it in a glass. Kvass without sugar does not acidify and is well stored.

Pour fresh birch sap through gauze folded in 2 layers into a large bowl in which you will cook kvass.

Then pour the calculated amount of dry yeast into the juice or put fresh ones, diluting them in a small amount of juice. Then mix the juice with yeast so that they are evenly distributed in it. If desired, you can add a little sugar and lemon to the juice.

Then cover the dishes with a lid and place them in a warm place for 4–5 days, no more. During this time, the yeast is activated and the fermentation process will take place.
