Kvass from birch sap and oats

During the collection of birch sap, it is possible to prepare very healthy birch kvass with oats. This drink requires fresh birch sap and unrefined oat grains. For sweetness and activation of fermentation, we use raisins and sugar. By the way, instead of birch sap, you can use just water: beneficial bacteria will still do their job, and kvass will turn out with a characteristic taste and aroma. But on the basis of birch sap, the drink turns out to be richer, softer in taste and healthier in composition.

You can buy unrefined oat grains in any supermarket in the cereals section or in the eco-products section. Before preparing kvass, the grains must be thoroughly washed and sorted out in order to get rid of dust and possible accidental impurities. We throw away the defective grains. Place the washed grains in a colander and let the water drain.

Pour strained birch sap into a clean jar. Add prepared oats, washed raisins and granulated sugar. Stir the contents of the jar with a spoon so that the sugar crystals dissolve.

Cover the jar with a clean, dry cotton cloth - the drink must have access to air, but at the same time it is necessary to close the container from dirt and insects getting inside. Leave the juice at room temperature for three to four days. During this time, the liquid will begin to ferment.

By the end of fermentation, air bubbles will appear in the drink. The kvass will become not so transparent - it will become slightly cloudy. We taste the drink, and if the degree of sharpness suits us, then we filter the kvass into a separate suitable bottle. If the sharpness is not enough, then we leave the kvass to ferment further and later we remove the sample. We store the finished strained kvass in the refrigerator.
