Birch sap kvass with oranges

Combine granulated sugar and dry yeast in a small bowl. Mix the crumbly mixture well.

Wash the orange and lemon thoroughly, then pour over boiling water and dry. Cut the citrus fruits into small pieces along with the peel. Place the sliced ​​fruit in a jar and add citric acid.

Next, pour a mixture of granulated sugar and yeast into the jar.

Lastly, pour in birch sap at room temperature, mix. It is important to pour in so much juice that the contents of the jar do not reach the neck by a couple of centimeters: there should be room for the air that will be released during fermentation. We close the bottle with clean dry gauze, tie it to fix it. Leave at room temperature for a day for fermentation. Then we filter the kvass and pour it into food containers.
