According to the proposed recipe, you can quickly (in 2-3 hours) prepare kvass from birch sap, and it will be well stored in the refrigerator for several weeks. For quick fermentation of kvass, dried rye bread and malt are used, which make kvass with a beautiful brown tint and give it a bright aroma and taste, and sugar is replaced by honey. You will get not only a drink, but also a good dressing for botvinia and okroshka.

Pour three liters of birch sap into a separate saucepan, add a spoonful of malt to it and stir.

Then dissolve honey or sugar in the juice and put the pan on low heat. Heat the juice that is warm, up to 30 ° C.

Cut a quarter of a loaf of black bread, preferably stale so that it does not swell too much, cut into thin slices. Then dry the slices of bread in any way: in a dry frying pan, in the oven or in the microwave.

Pour the heated birch sap with the malt and honey dissolved in it into a clean 3-liter jar and transfer the pieces of dried black bread to it.

Then cover the jar with a napkin or a piece of gauze, but not with a tight lid, and put it in a warm place for 2-3 hours. During this time and as a result of the fermentation process, your juice will become delicious kvass. Strain the kvass, pour it into plastic bottles and place in the refrigerator. You can drink chilled kvass from birch sap right away. In the refrigerator, it retains its taste for several weeks.
