Kvass from birch sap with raisins without yeast

Kvass with birch sap can be prepared without yeast. Natural fermentation is still initiated, and it gives a softer, more natural taste. Add raisins for sweetness, and some dried apples for refreshing notes.

Wash the raisins and dried apples in warm water and then dry them.

Wash the jar thoroughly and let it dry. Pour birch sap into it, lay dried fruits. Close with a lid and leave at room temperature for fermentation for two to three days.

When bubbles appear on the surface of the kvass, we taste it. If you like the degree of sharpness, then filter the kvass and put the finished drink in the refrigerator for storage.
