Birch sap kvass with raisins and honey

In the preparation of kvass, sugar is required - it is closely related to the fermentation process. However, many replace it with honey, and for good reason. This drink acquires honey notes and turns out to be more useful.

Chop the yeast into small pieces, place in a bowl and fill with warm water (50-60 milliliters). Let stand for a while to dissolve and mix well.

Add honey to the resulting mass and mix thoroughly.

Squeeze juice from lemons, discard seeds.

We mix birch sap with yeast mass and lemon juice. We pour the resulting liquid into glass jars, cover with lids and put away in a dark place with room temperature for three to four days.

After that we taste the kvass. If everything suits you, we filter the finished drink and put it in the refrigerator for storage. If the sharpness is not enough, we leave to wander further.
