Kvass from birch sap with raisins and sugar

One of the easiest ways to make kvass. Just add sugar, raisins and set aside to ferment. Kvass will carbonize over time and become “sparkling”. We store such kvass in a cold place and serve it cold.

Wash the raisins in warm water and then dry them.

Wash the plastic bottles thoroughly and let dry. We pour birch sap into them, without adding about five to six centimeters to the neck.

Pour granulated sugar into bottles and put washed and dried raisins. We close the bottles with lids, shake well to dissolve the sugar. Then we open it and let the air out.

Squeeze the bottles slightly so that the liquid comes closer to the edge of the neck. We close the lids in this state and put them in a room with room temperature for a couple of days. After that, open the lids and release the air again. We remove the bottles with kvass in a cool dark place and let the kvass ripen for a month.
