Kvass from birch sap with honey without yeast

Refreshing kvass can be easily made from birch sap - this is especially important during the harvesting season of this healthy drink. Add honey, rye bread crumbs and raisins. We are waiting for several days - the kvass should start fermentation and ripen.

Cut the rye bread into small cubes.

Fry the bread cubes in a dry frying pan or in the oven at 200 degrees until a black-brown crust will give kvass its characteristic color and specific taste.

Pour room temperature birch sap into a jar, dissolve honey in it, then put raisins and cooled rye crackers. Cover loosely with a lid and leave in a warm place for sourdough.

After about two or three days, you can try kvass. If the drink suits the taste and saturation, we remove the container in a cold place to stop active fermentation and storage. If necessary, we leave to wander further for greater saturation and "vigor". Serve cold kvass with a slice of lemon - very refreshing.
