Birch sap kvass in bottles

It is convenient to prepare kvass in bottles. You can take the finished drink with you right away without pouring it into a more comfortable container. For flavor, we suggest putting a sprig of raspberries or currants in each bottle - just choose high-quality shoots without damage.

Wash the bottle thoroughly and dry it beforehand. We put in it the washed, treated with boiling water and dried twigs. We put granulated sugar and pure raisins in the bottle.

Pour birch sap into the bottle. Do not add a couple of centimeters to the neck - it is important to leave some space for gases that will be released later during fermentation.

We close the bottle with a clean, dry lid.

Leave at room temperature for three to four days for fermentation. If the room is warm, then, most likely, even less time will be required for fermentation. When the bottle is inflated, open it and release the air. Again, we leave under the same conditions until swelling. We open and re-let the air come out.

After that, we remove the kvass for storage in a cold, dark place in a closed form. The shelf life is approximately one month. It is better to serve cold on the table.
