Elderberry kvass is a great way to quench your thirst in the summer heat. It takes very little time to prepare this refreshing drink with a pleasant aroma: it is infused in just five days. You can store kvass prepared in the way that is presented to your attention for a whole week.

First, let's start preparing the inflorescences, which should be freshly picked. We carefully sort them out, since they can contain a large number of beetles and midges.

After this, the inflorescences must be rinsed with running water and dried.

Next, we take a ten-liter glass jar and put the prepared elderberry inflorescences on its bottom.

The next step is to combine sugar with citric acid in a separate container. Pour everything with two liters of cold water, mix everything thoroughly until the sugar is completely dissolved. After that, fill the inflorescences with the resulting solution, which we put in the jar.

Next, pour the remaining water into the jar. Everything needs to be mixed, then left in a warm place for five days. The jar does not need to be covered with a lid.

After the specified time, the contents of the jar must be filtered: first through a colander, then through cheesecloth. Then pour the drink into plastic bottles. It is better to store it in a cool dark place.
