Chicory kvass is very easy to make at home. It tastes like a drink from a barrel, which could often be found on the streets of Soviet cities, but lacks the wheat notes characteristic of bread kvass.

Pour water into a saucepan, add sugar, citric acid, chicory and bring this mixture to a boil. Cool the liquid to 33-35 degrees.
