Oat kvass without sugar

An excellent drink made from oats and honey that quenches thirst on a hot summer day is kvass. It takes a couple of days to prepare, its shelf life is the same, so it is advisable to use it a couple of days after preparation. Instead of sugar, we will add fructose to the drink - this is a natural fruit substitute that is much healthier than sugar. Combined with honey, we get the perfect soft and rich taste.

To make kvass, we need oblong, unhulled oats. We wash the grains several times in warm running water and pour the oats into a three-liter jar, add 5 tbsp. fructose and pour cold filtered water. Since in the process of infusion the oats will rise up, a little space must be left up to the neck of the jar, so pour water into the 2.5 liter jar.

Cover the top of the jar with a cotton napkin or gauze rolled into 2-3 layers. Leave the oats to infuse for 5 days at room temperature.

After 5 days, we drain the present water from the jar into the sink, we will no longer need it. The remaining oats are our sourdough for the future kvass. Pour clean filtered water into a jar of oats, add the remaining fructose and honey, mix well, cover with a napkin and leave the jar in a warm place for a day.

A day later, we have kvass ready. We filter it into a jug, cool and serve. The remaining oats can be used to make kvass for 2-3 months.
