Kvass from rye flour with mint

Kvass with mint is an incredibly aromatic, refreshing drink that you absolutely must make at home! We make it with leavened yeast, add a little raisins and keep warm for several days. Everything is very simple and insanely delicious!

First, let's prepare a sourdough for the future kvass. It is best done with wheat flour. Stir half a glass of flour in 1.5 tbsp. water, so that no lumps form. Then add dry yeast and half a glass of sugar. Stir, cover with a lid and leave for 1-1.5 days.

Now stir the rye flour in chilled boiled water. In terms of density, the mass should be similar to cream. If the mixture is too thick, add a little more water. Add clean mint leaves and stir.

After that, dissolve granulated sugar in 1 liter. water. And we introduce it into the rye mass, and also add sourdough and raisins.

We cover the pot with kvass and send it to a warm place for 2 days. After that we filter the kvass and put it in the refrigerator.

Tip: Save the thick and some drink for next time. Kvass on this basis is even tastier than on sourdough! You can also add honey or horseradish to the finished kvass.
