Did you know that you can make delicious kvass from birch sap? Many of us collect birch sap in the spring, which is then harvested for the winter. If you add a little sugar and a handful of raisins to the juice, you can make an amazing kvass that perfectly quenches your thirst. Its taste is moderately sweet and rich, with light notes of dried fruits.

We pass the birch sap through a sieve or cheesecloth folded in two or three layers to get rid of small debris that may be contained in the sap. Then, using a watering can, pour the juice into the bottle. Shake the bottle a little so that all the ingredients mix and the sugar dissolves in the juice. Then we close the bottle with a lid and leave it in a cool place for 7 days.
