Kvass with honey and raisins

I want to share a recipe for a fragrant drink with honey and raisins. This kind of kvass was made by my grandmother. In the summer in the village, the drink perfectly quenched thirst and it seemed that no lemonade or juice could replace it. A harsh drink can be used to make a flavored okroshka.

Ingredients

Cooking process

step 1 out of 15
Cut the rye bread into slices. If you want to constantly prepare such a drink, dry croutons in large quantities in advance. It is not necessary to cover the baking sheet with baking paper; distribute the bread slices evenly.
step 2 out of 15
Place a baking sheet with bread in an oven preheated to 180 degrees and cook the croutons until golden brown, periodically turning them over so that they brown evenly. This can take up to 30 minutes. The color of the finished drink depends on the color of the croutons. Remove the finished croutons from the oven and cool completely.
step 3 out of 15
Measure out the required amount of honey.
step 4 out of 15
Add a small amount of warm water and mix thoroughly until completely dissolved.
step 5 out of 15
Add the required amount of compressed yeast to the resulting liquid.
step 6 out of 15
Mix thoroughly until completely dissolved.
step 7 out of 15
Put the cooled croutons in a deep container. I am using a saucepan.
step 8 out of 15
Add the amount of granulated sugar indicated in the recipe.
step 9 out of 15
Sort out a handful of raisins and rinse under running water, dry them on a paper towel and put them on the croutons. Raisins are good for the fermentation process.
step 10 out of 15
Then pour in the dissolved yeast mass.
step 11 out of 15
Fill with warm drinking water.
step 12 out of 15
Cover with a clean tea towel and leave to infuse for at least 3 days at room temperature.
step 13 out of 15
Strain the finished homemade kvass through a fine sieve covered with gauze. Transfer the starter culture to a glass jar, close it and place in the refrigerator for next use.
step 14 out of 15
Place the strained kvass in the refrigerator for cooling, and then serve.
step 15 out of 15
To prepare such kvass for convenience, you can use a plastic eggplant from under drinking water.

Enjoy!
