Homemade kvass without yeast

Kvass is a traditional Slavic drink prepared on the basis of fermentation. The sour drink is drunk chilled or used to make chilled summer soups. Kvass perfectly quenches thirst. I want to offer an excellent recipe for kvass without yeast.

Cut the rye bread into slices. If you want to constantly cook kvass, dry breadcrumbs in large quantities in advance. Spread the bread squares evenly on a baking sheet, place in a preheated oven and cook, turning occasionally to prevent them from burning. This can take up to 30 minutes. The color of the finished drink depends on the color of the crackers.

Remove the finished crackers from the oven and cool, and then put in a glass jar. I use a three liter container.

Then add the required amount of granulated sugar. Pour half of the boiling water over and leave to infuse for about 15-20 minutes. This time is quite enough for the crackers to get wet enough.

Then add vanilla sugar and mix thoroughly. Fill the jar completely with warm boiled water.

Cover the jar with gauze folded in several layers and secure it with an elastic band on top. Leave to infuse at room temperature for a day.

Strain the finished homemade kvass through a fine sieve covered with gauze, or pour directly through the gauze that covers the jar into the bottle. Place the strained kvass in the refrigerator to cool, and then serve.
