Wash the tomatoes and put them in a sturdy, tight bag.

Place the peeled and rinsed garlic and chopped hot pepper slices in the bag. Add peppercorns.

Stir salt and sugar in cold drinking water, stir thoroughly and leave for 5 minutes to dissolve the crystals. Pour the brine into a bag, deflate and tie tightly.

Fold the bags into the tank and fill with brine so that it does not cover them by only 5 cm from the top. To prevent the bags from floating, cover with a lid of a smaller diameter and place a small weight on top. Place it in the cellar and after 25 days the fermented tomatoes will be ready.
