An indisputable fact that the most delicious pickles, and not only for the winter, are pickled green tomatoes in a barrel. It can be fermented in a jar, bucket, and large saucepan, but barrel tomatoes are superior to all others for their distinct woody aroma and flavor. Due to the large volume of the preparation, you need to ferment tomatoes immediately in a cold place. All green tomatoes are suitable for salting, except for salad and sauce varieties.
