For those who love eggplant, I want to offer one of my favorite recipes for lecho from eggplant, bell pepper and carrots. I love this winter snack that will brighten up your holiday celebration and delight you.

First of all, prepare all the necessary ingredients for a fragrant lecho. Wash the tomatoes, eggplants and bell peppers thoroughly. Wash and peel the carrots with a vegetable peeler. Peel and rinse garlic and onions.

Cut the tomatoes in half, remove the stalk and chop with a blender, meat grinder or food processor.

Cut the peeled onions into thin half rings.

Grate the peeled carrots on a coarse grater.

Cut the eggplants into medium-sized cubes.

Peel the bell pepper from seeds and core, and then cut into half rings.

Pour the required amount of vegetable oil into a container with a thick bottom. Place on medium heat. Arrange the chopped onions and grated carrots. Stir occasionally and fry for about 5-7 minutes.

Then add eggplants, bell peppers, tomatoes, granulated sugar and table salt. Stir well, bring to a boil, reduce heat and simmer for about 30-35 minutes. 10 minutes before cooking, pour in table vinegar and add pre-chopped garlic, mix well.

Prepare jars, wash and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or simmer in a saucepan for about 10 minutes. Remove the hot eggplant lecho from the heat, carefully place in sterile jars, and roll up with sterile lids using a seaming machine.

Turn the jars of eggplant, bell pepper, and carrot lecho upside down. Leave as it is until it cools completely, wrapped in a warm blanket. Then, turn the cooled jars of brightly colored snack over and transfer to a cool, dark place for storage. Be sure to taste the juicy lecho.
