Hot pepper lecho

If you are a spicy lover, this recipe is for you! A spicy appetizer of hot peppers in tomato juice with garlic and plenty of fresh herbs. It goes perfectly with meat dishes, and also serves as an excellent addition to pasta or potatoes.

We wash the tomatoes under running water, put them on a towel and let them dry a little. Then we pass the tomatoes through a meat grinder and put the tomato puree in an enamel pan.

Put the saucepan on the fire, add salt and sugar, stir, bring to a boil and cook for 10 minutes.

Peel the garlic, rinse and cut into thin plastics.

Put whole pods of hot pepper, chopped garlic, chopped parsley in tomato juice, add vegetable oil and vinegar. Mix everything, bring to a boil, reduce heat and cook for 10 minutes, then remove from heat.

We lay out the finished hot lecho in sterilized jars, evenly distributing the pepper pods and tomato filling, tighten them with boiled lids.

We turn the jars with lecho upside down and leave at room temperature until they cool completely, then put them in a cool dark place for storage.
