Zucchini and tomato lecho for the winter

I would like to share a breathtaking taste of zucchini and tomato lecho for the winter. I use this recipe if you need to save the crop of zucchini. I roll the blank, bright in taste and color, in small jars so that the blank can be eaten at a time.

Wash the zucchini or zucchini thoroughly in running water, dry, cut off the ends and peel the skin with a vegetable peeler.

Cut the peeled zucchini lengthwise. Use a tablespoon to remove the seed core. Cut into medium sized cubes.

Wash and dry the tomatoes, bell peppers and hot peppers. Peel the bell peppers and hot peppers from the seeds and core. Peel the onions and garlic. Pour the tomatoes with boiling water for literally 1 minute, then put them in ice water and peel them off.

Cut out the stem of prepared tomatoes and place them in a blender bowl, add bell peppers, hot peppers, peeled onions and garlic, chop the vegetables until smooth.

Wash the jars thoroughly and sterilize in the microwave or oven. Pour boiling water over the lids or boil in a saucepan. Pour a large amount of drinking water into a deep saucepan, bring to a boil, salt, dip the zucchini portions into boiling water for a couple of minutes, then remove with a slotted spoon and put in sterile jars.

Pour the chopped vegetable mass into a saucepan with a thick bottom, add granulated sugar, table salt, ground sweet paprika, cloves and bay leaf. Boil the filling for 5-7 minutes after boiling. Add olive oil, mix thoroughly.

Then remove from heat and immediately fill the jars of zucchini with the prepared filling. Cover the jars with sterile lids and place them in a saucepan, cover the bottom of which with a kitchen towel. Pour warm water over the hangers of the jars, put on medium heat, bring to a boil, reduce heat and sterilize the workpiece for 15 minutes.

Gently remove the hot cans and screw tightly with screw caps or seamer. Turn the cans upside down, wrap them in a warm blanket, leave them to cool completely.

Then move the jars of the flavored snack to a cool, dark place for storage. This appetizer will look great as a pasta sauce or other cereal side dish.
