Aromatic zucchini lecho can be served with meat or fish, and can also be used as an independent snack. The dish can be prepared for the winter and served all year round.

We wash the tomatoes and cut them into small wedges.

We pass the tomatoes through a meat grinder. We shift the vegetable gruel into a saucepan. Add chopped garlic and hot peppers to this. Stir and put on fire. Bring to a boil and continue simmering for another 20 minutes.

Let's prepare the rest of the ingredients. Cut the zucchini into thin slices. Remove the seeds from the bell pepper and cut into strips. Combine all vegetables, hot tomato puree in one saucepan. Add vegetable oil and bring to a boil.

After boiling, simmer vegetables for 25-30 minutes. Add sugar, salt and vinegar 5 minutes before cooking and mix thoroughly. Then we remove the lecho from the fire.
