Zucchini lecho with tomatoes

The well-known mouth-watering salad "Lecho" is easy to prepare from zucchini and roll up for the winter. This appetizer will be light, not too spicy, and fairly easy to prepare. Tomatoes will give you a delicious juice that will complement the zucchini in a jar. Try it!

Take ripe zucchini and rinse well. After that, peel the fruit from the skin with a knife or vegetable peeler.

You can easily remove the middle from the zucchini with a tablespoon, and if you take very young zucchini, then there is no need to remove the middle from them.

Rinse peppers, peel onions and garlic. Finely chop the hot pepper with garlic or beat with a blender.

Chop tomatoes with bell peppers and add to chopped peppers and garlic, add chopped onions and beat until smooth. At the same time, send a large saucepan with three liters of clean water to the stove, add salt and bring the water to a boil. Sterilize the jars together with the lids.

Cut the zucchini into large pieces and use a slotted spoon in boiling water for a couple of minutes. Then remove the zucchini from the boiling water and place in sterile jars.

Add salt, granulated sugar, and spices to the vegetable puree. You can use bay leaves, peas, cloves, dried herbs. Mix everything and put in a saucepan over the fire and simmer for five minutes.

Pour boiling vegetable puree into jars with zucchini so that it reaches about the hangers of the jars. Place the lids on the jars and place them in the pot for pasteurization. To do this, cover the pan with a towel, place the cans and pour hot water over the hangers of the cans. When the water in the pot boils, pasteurize the jars for 15-20 minutes. Then close the jars with sterile screw caps or roll them up with a seaming machine.

Turn the cans with the blank upside down until it cools completely and store in a cool place where the temperature does not exceed 12 degrees. If you want to simplify storage, add one tablespoon of 9% vinegar for every 700-800 ml.
