Cucumber lecho with onions

I made another discovery for myself among winter preparations. To prepare lecho from cucumbers with onions, you can use overgrown ugly cucumbers and tomatoes that are not suitable for canning. A cucumber and onion appetizer turns out to be fragrant and very tasty.

Prepare all the necessary ingredients for the cucumber and onion lecho.

Wash the cucumbers thoroughly, pat dry with paper towels. Trim the ends and then cut into circles.

Peel the onions and rinse under cold running water, then cut into medium cubes.

Wash the carrots thoroughly, peel them with a vegetable peeler, and then grate on a coarse grater.

Wash the tomatoes well, cut into several pieces and remove the stalk.

Prepare a deep saucepan in which you will cook lecho.

Put chopped onions, cucumbers and carrots in a saucepan. Place over medium heat and bring to a boil, reduce heat and cook for 15 minutes, stirring occasionally.

Prepare the jars, wash them thoroughly and sterilize them in the oven. You can also sterilize cans in a microwave oven or in a water bath.

Pour boiling water over the lids or simmer in a saucepan for about 10 minutes.

Add chopped tomatoes to the vegetables, the required amount of vegetable oil, granulated sugar and table salt. Stir well and cook for another 15 minutes.

Pour in vinegar a couple of minutes before cooking and mix well.

Remove the hot lecho from the heat.

Gently arrange the snack in sterile jars, screw with sterile lids or roll up with a seaming machine. Turn the lecho cans upside down.

Leave as it is until it cools completely, wrapped in a warm blanket. Then turn the cooled jars of cucumber and onion lecho over and transfer to a cool, dark place for storage. Serve lecho as a cold snack.
